Food & Cooking


We take great pride (and pleasure!) in being able to produce a gourmet snack or 3 course meal in the most unusual places and conditions. Smoked sheep cheese, olives and peppered salami with a fine red “Undurraga” reserved table wine is good anywhere but kicking back on a raft as we drift past glaciers and 100m waterfalls is something else. The combination of fresh meats and vegetables bought out on the trail or in a neighbours farm along with the best wines and condiments makes for a good starting point, but when cooked over wood fires and shared among friends overlooking spectacular views the pleasure is doubled. Our menu blends the best of local produce with all the little extras from elswhere in the world to provide a nutricious, enjoyable and interesting meal in just about any circumstances. We typically cook twice a day and provide an abundance of snacks and easily prepared food during the day.

Breakfast is always big on choice and calories. Typical options include eggs and bacon, Patagonia pancakes, cereals, muesli, yoghurts, fresh brewed coffee, teas and fresh fruit.

Lunch is lighter and more easily prepared with a wide selection of cheeses, crackers, whole meal breads, cold meats, salamis, salads, chocolates, dried and fresh fruit plus plenty of liquids – coffee, juices and something stronger for those special moments.

Evening meals are an event and whilst we might be using rain jackets instead of dinner jackets and logs instead of a table it is none the less a moment to celebrate the day. Our camp chefs are known to get a little inventive and creative when the pressure is on to provide a good wholesome 3 course meal, from the contents of a couple of dufffel bags so surprises like a strong Pisco Sour and a starter of “Gaucho Guacamole” with “Lamb a l´Genéve” followed by “Terminal Moraine Pizza” or “Fitzroy Fries” accompanied by fresh salads of peppers, lettuce, carrot, onion and advocado and then (for the truly hungry!), chocolates, truffles, fruit and liquor.
Our guides and camp chefs are all fully versed in providing equally nutritious and attractive meals for those of you with dietary needs. We do ask that you inform us with plenty of anticipation of any specific needs you have and whilst vegetarians options on the menu are normal there are certain products we need more time to get as they are not always available locally – wheat free food for example.
